Happy Homemaker - January 12,2026


Happy January! Yes, it is the beginning of the second full week and this picture screams Christmas, but I love it and just wanted to use it once before I must change it. I love the cozy home feeling it gives and what do we all need in January- a cozy home free of stress and the hustle and bustle that comes with the holidays. 

Yesterday, my husband and I celebrated 31 years of marriage. I have been with this man over half my life and yet, with all his faults, I still love him to the moon and back. We both have our faults and yet, we manage to work through them and find what works best for us. We are opposites in many ways and although, it can be an issue at times, I can't imagine life with anyone else, and we have made it work.

THE WEATHER IN MY NECK OF THE WOODS:

The weather in Indiana has literally been bi-polar to say the least. We have seen temperatures near 70 degrees in January this year. However, it is a roller coaster, it seems. We have really warm days, then cold, and then warm again. Nothing like the normal weather in January. No snow other than a few flurries and the extended forecast looks similar. It is almost eerie.

All the grandbabies with my father-in-law. He is 83 years young and a real sweetheart. To know him is to love him.

NEW RECIPE I TRIED OR WANT TO TRY:

This is a recipe that my husband found that he is wanting to try. 
  • 1 lb ground beef – This is the hearty, flavorful base that gives your bombs their satisfying bite.

  • 1 tablespoon olive oil – Used to sauté the onion and garlic, adding depth from the very first step.

  • 1 small onion, finely chopped – Brings a subtle sweetness and makes the beef mixture extra savory.

  • 2 garlic cloves, minced – The star of the show! Adds rich, aromatic garlic flavor throughout.

  • 1 teaspoon Italian seasoning – A blend of herbs to round out the taste with just the right balance.

  • Salt and black pepper, to taste – Enhances every other flavor in the mix.

  • 1 cup shredded mozzarella – Delivers that irresistible, gooey cheese pull.

  • ½ cup grated Parmesan – Adds a nutty, salty kick and forms a crispy, golden crust when baked.

  • 1 (16 oz) can refrigerated biscuit dough – The secret shortcut for pillowy, tender wrappers.

  • ¼ cup unsalted butter, melted – Brushed on top for that bakery-style finish.

  • 1 tablespoon fresh parsley, chopped – Optional, but perfect for a pop of color and freshness.

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. This prevents sticking and helps everything bake evenly.

    1. Heat olive oil in a skillet over medium heat. Add the finely chopped onion and garlic. Sauté for 2–3 minutes, just until fragrant and soft—not browned.

    2. Add the ground beef, Italian seasoning, salt, and pepper. Cook, breaking up the beef as you go, until it’s browned and fully cooked through.

    3. Remove from heat and let it cool slightly—this helps the cheese melt evenly when you stir it in and prevents soggy dough.

    4. Mix in the mozzarella and Parmesan cheese. You want a creamy, savory filling that holds together but is still scoopable.

    5. Flatten each piece of biscuit dough into a small round. Scoop a spoonful of the beef-cheese filling into the center.

    6. Fold the edges over and pinch to seal. Make sure it’s tightly closed to prevent leaks during baking.

    7. Place each filled dough ball seam-side down on your prepared baking sheet. Brush the tops generously with melted butter and sprinkle a little extra Parmesan on top if you like.

    8. Bake for 12–15 minutes, or until golden, puffed, and lightly crispy on the outside.

    9. Garnish with chopped parsley, let them cool for a minute or two, and serve warm. These are especially good straight from the oven—be careful, they’re hot inside!

I am working on a new project that I will be adding to my Etsy site soon. It will be Blessing Bags. Each bag will contain a devotional book as well as a journal, Bible pens and highlighters, and a small gift such as a lip balm, bookmark, or similar gift. 

I am also working on a diamond art project that is two zebras. I love doing diamond art.

DEVOTIONAL, PRAYER, OR BIBLE VERSE:

Matthew 6:25 " Do not worry"

This is Jesus talking. The title of my devotional today was Scaredy-Bear. It talks of Jack, a 15-pound cat that the owners find looking up a tree at a large black bear and as he hisses, the bear climbs up the tree. They wonder why the bear is scared of this small cat. The story reminded me of the story of David and Goliath. David is not afraid of Goliath as he knows God is on his side. Why do fret and worry over small things when we have such a powerful God on our side. Life is not about what we see, it is about how we see it. We can see new challenges as fearful, or we can see them as learning experiences that we are going to face head on with God at our side. 

Speaking of David and Goliath, have you seen the new movie, David. If not, I highly recommend that you see it. I went with some of the grands last week to see it, and I was captivated throughout the entire movie, even though it is animated. The story is not new to me, but I feel it was depicted to a point of being a story you have yet to hear. The soundtrack is amazing. The message is great, and I am thankful to see the movies that are being put out by Angel Studios. We need some wholesome movies to be released into this crazy world that we live in.
