Happy Homemaker - January 20,2025
Good Morning and Happy Monday! I am glad to be here and share some happy thoughts with each of you as I have been sick all of last week. I still am not feeling great, but it seems that the virus is attempting to exit. Now if we could only have a bit warmer weather, I would be so glad! The Weather in My Neck of the Woods...
FRIGID! It is winter here for sure. It was below zero here this morning and our high is to be 10 degrees Fahrenheit today.
Things That Make Me Happy...
This past week the only thing that has made me happy was my blanket, hot tea, and my book. I just have not felt well at all. I hope that this week is much better. A warm blanket and hot tea always make for happy moments.
Books That I Am Reading ...
I am currently reading Run Rose Run by James Patterson and Dolly Parton. It is really good so far and I plan to finish it this week and start another one. I am really trying to get much of my reading done before gardening and canning season begins and my time is limited. If anyone knows of any company that truly pays you for reading and giving reviews, I would love to know.
What's On My TV Today...
The news is on at the moment as my husband likes to watch it. I don't care about it. I will probably try to stream some episodes of ER today as I enjoy that show. The only show that I really am into right now is Fire Country. It is such a good show!
On The Breakfast Plate...
I have to eat breakfast because of the medicine that I am on. However, I am usually nauseated after the meds and do not want to eat. Today will be a banana or toast.
On The Dinner Plate...
We are trying a new recipe tonight that my husband has found. It is pepper steak cooked in the crockpot. I will share it later in this post. I hope that it is good. I have made pepper steak before but never in the crockpot.
On The Menu...
Mon. - Crockpot Pepper Steak, Rice, veggie and raspberry muffins for dessert.
Tues. - Hamburgers and Fries
Wed. - Slamon or Chicken
Thurs. - Sunday are still to be planned as I may go to my daughter's house if I feel better.
On My to Do List ...
Clean house as I have not accomplished much this past week. I am also doing a Declutter 365 program so 15 minutes of each day I will be decluttering something in my kitchen. This week focuses on the pantry and food areas. This has really helped me in staying on track with clearing out some of the kitchen clutter that I was not sure I wanted to tackle. Why did I have 12 slotted spoons?
New Recipe I Tried or Wanted to Try...
Slow Cooker Pepper Steak
Equipment
Ingredients
- 2 lbs. beef strips, Look for beef cut into strips already or buy top sirloin and cut into 1/2 inch strips (round steak works well too).
- 1 green bell pepper, sliced thick
- 1 red bell pepper, sliced thick
- 1 white onion, sliced
For the sauce:
- ½ cup water,
- 2 beef bouillon cubes
- 3 Tbsp. soy sauce
- 1 tsp. Worcestershire sauce
- ¼ tsp. ground ginger
- ¼ tsp. garlic powder
- ½ tsp. black pepper
- 2 tsp. brown sugar, honey or white sugar work too
- 1 Tbsp. cornstarch
- ¼ tsp. red pepper flakes, (optional)
Instructions
- In a small microwavable bowl add the water and the beef bouillon cubes. Place in the microwave for 30 seconds, mix until dissolved. I use the back of a spoon or the tip of a whisk to break up the bouillon cubes. (If you don't have a microwave, boil your water on the stove-top).
- Add the soy sauce, Worchestershire sauce, ginger, garlic powder, pepper, brown sugar and cornstarch to the bowl with the water and bouillon. Whisk until smooth. (Add the red pepper flakes if you desire). Pour this mixture into the slow cooker.
- Add the beef, bell peppers and onions onto the sauce in the slow cooker.
- Cover and cook on LOW for 5 hours.

I am busy decluttering and won't be creating anything this week. As I need to get the house cleaned again from being sick all week.

Hope it warms up for you and that you continue to feel better. A lot of sickness going around at this time of year! Your pepper steak recipe looks interesting, I've never heard of it made in the crock pot but that seems like a great idea. Need to check out the declutter 365 program. I tried one the first week of January but I think I lost my paper about how to do it, under the clutter. Ahem. Have a great week!
